Vegan Food: Indian Pav Bhaji (Watch with subtitles)


Hello everyone and welcome to Herbs, Spices
and Curry. Today we are making a really interesting recipe made of lots of
vegetable and you can use vegetables of your choice but today I’m showing of
which vegetables I use. I am using carrots 400 grams, sweet pepper 400 grams,
peas 500 grams cauliflower 600 grams, eggplants 500
grams, potatoes 550 grams. I will mix all these vegetables and then pressure cook in a pressure cooker I also have 750 grams of tomatoes 300 grams onion and 1/4 cup crushed garlic and 1/4 cup grated ginger. Salt can be added according to taste. I also have specific spice mixture known as bhaji masala which is added in this dish This is the pressure cooker that I will
be using today. I am adding vegetables in pressure cooker There is no sequence
over here Just add all the vegetables in the cooker Right now the amount of veggies is looking so much But
when we boil and mash these, the amount will be almost half of it I am adding one cup water and one table spoon of salt to these veggies I have kept the pressure cooker on the Induction stove I will cook the veggies on high This much amount of veggies will take 15 minutes of pressure cooking After 15 minutes, the whistle is blowing I will remove the pressure cooker from stove and after cooling it open the lid I have opened the cooker now As you can see the amount has reduced to half I am mashing the veggies now We don’t need to mash it thoroughly We do not mash the veggies in the pulp, leave some textures in there Now we will prepare the bhaji masala or sauce for mixing in the mashed vegetables. I have the shallow pan ready on the stove on high heat I will add two table spoon oil in it Traditional bhaji is cooked with butter or Ghee for unique taste but here I have added Canola oil Since we are making vegan bhaji I am allowing oil to heat up a bit I have added garlic and ginger in the pan and I will saute it till it is light brown in color You can vary amount of ginger and garlic according to your taste Next ingredient to go in the pan is onion and after that we will add tomatoes We don’t want our garlic and ginger to burn so we will keep these light brown as these will get fried with onion as well You can see that the color has turned slightly brown or goldenish at this point We don’t add garlic, ginger and onion at same time as the onions leaves moisture when heated So, it hinders proper frying of the ginger and garlic That is why we fry these lightly prior to adding onion A wonderful aroma of garlic and ginger is spreading around Now, I will add chopped onions to the mixture These are four medium size onion and 300 grams in weight I will saute onion properly with the ginger garlic mixture until onion is transparent in color I have covered the pan and cook onion for almost three minutes There is lots of moisture in the pan, I will open and saute the mixture in pan It is important to not overcook onion. I have seen people burning onion deep brown. That bring bitter taste in food Transparent onions bring sweetness and enhance taste manyfold The onion has turned transparent I will now add tomatoes At this point I will add two table spoon of Pav Bhaji masala and one table spoon of salt I will cook it now for another 10 minutes on medium high The sauce is looking nicely cooked It is still a bit watery so I will cook it without lid for 2-3 minutes Now we add the boiled and mashed veggies in this sauce This amount of bhaji is good for 12 people. You can reduce the amount as per your requirement You can see that the veggies though mashed are still identifiable I will now cook the veggies and the sauce together for another 15 minutes Traditionally Bhjai is cooked with lots of butter. If you want you can add four table spoon of butter at this time. I am not adding butter since my Bhaji is Vegan Bhaji After 10 minutes, it is absolutely ready. I will add chopped coriander leaves to the bhaji I will now transfer it to a serving pan It is such a nice dish, filled with nutrients, and very tasty Let us prepare the bun/dinner roll to go with it I am using dinner roll and making it crispy I will enjoy the bhaji and the dinner roll/pav To serve it to my kids, I will prepare dinner roll with butter And serve the bhaji with lots of butter. Kids need butter:) So you can see that it is very simple, aromatic, nutritional and tasty dish.
