of vegan food And we’re here with one of them,
Chef Tal Ronnen, at Crossroads And this dude’s a legend. Mainly for his vegan oyster shooters.
A lot of people can’t believe That they don’t have any
oysters in them. These oyster shooters link up with
Clams Casino, Oysters Rockefeller, Shrimp Cocktail, Calamari,
Ceviche, and Lox Mousse. They make one hell of a seafood tower.
Let’s go check it out. That is the lobster mushroom. Oh wow!
That’s crazy! Wow. The season for lobster mushroom are Late July, beginning of August… Until Mother Nature says, “That’s it.” Now, I’ve heard these taste
just like lobster. The color looks like a lobster, too.
— Yeah. Look how red and pink and vibrant that is.
Cheers. Oh whoah. The mushroom is awesome.
It has like the mushroom crunch– the texture. Those seafood notes really like,
peeps through when you’re eating. I mean the texture is a little more like
that of the dense mushroom. It has that like
shellfish flavor to it. It’s bomb. Shiitake mushroom and
cocktail sauce. And so they like smoke it
So that it’s kind of like the texture Of an oyster. This is like an oyster shooter,
but vegan. With tequila. Yeah. With tequila.
— Let’s go! (Laughter) They should all the oyster shooters
with tequila. That level of smokiness and that
level of bacon flavor. That’s what I’m saying.
–Yeah. Like straight up applewood-smoked bacon. But, you know it’s not.
We know… This is vegan and that
we just ate –I’m ready to rock.
Clams Casino. Ad I can’t tell he difference. Smoked Salmon Mousse?
But the salmon is made out of carrot? Yeah.
And rye bread. Right away!
— Yo. That’s crazy! That is the closest to 100% Imitating texture, flavor, appearance,
all of that. I’m really curious to see how
they make this one taste like seafood. A lot of the flavor from ceviche
comes from like the onion, The lemon…
Tomato… It’s the marinade that makes a
huge difference. Mmm.
The lychee is good. Does it come close to raw fish?
Yeah. The lychee really
carries that. It cleanses the palette, recharges you. Ready to go into that next bite. I’ve been wanting to try this vegan
Calamari as soon as I heard it was on the menu. Boiled down with kombu
and sugar and stuff. I like how it is.
It’s like little scoops. The are the best bites of calamari.
